Today was a rainy day here in Maryland and what better way to spend a day inside than to whip up a healthy snack that the family could munch on while watching movies and playing games. Crispy kale chips will satisfy your need for a crunchy, salty snack and is loaded with nutrient richness that is recommended for your daily diet. Delicious and healthy? Kale chips, you had us at hello!
Avocado is a favorite in our house and when we saw this amazing recipe on Pinterest we knew it was the perfect companion for our kale chips. It is packed with flavor, fresh ingredients and makes for a satisfying snack. With its creamy texture and savory taste, avocado hummus is a must try and will be our family go to snack for many rainy days to come.
for the Crispy Kale Chips
1/2 bunch tuscan kale
1/2 bunch baby kale
2 tbsp olive oil
salt & freshly ground pepper
for the Avocado Hummus
2 avocados, medium ripe
1 (15 oz) can of chick peas
1 tbsp cilantro leaves, chopped
1 clove garlic
3 tbsp fresh lime juice
1 1/2 tbsp of tahini
3 tbsp olive oil
1/8 tsp cumin
salt & freshly ground pepper to taste
red pepper flakes to taste
Preheat the oven to 275°F
Thoroughly, clean kale bunches with cool water and dry with towel or salad spinner.
Tear the kale leaves into 1” – 2” pieces, discarding the stems and ribs, and place in large bowl.
Drizzle and evenly coat kale pieces with olive oil and toss with hands.
Arrange the leaves in a single layer, with no overlap, on ungreased cookie sheet.
Ensure each is kale piece is covered in oliveoil by gently rubbing with fingers.
Sprinkle with salt and pepper.
Bake for 18 to 20 minutes or until leaves are crispy.
Pulse chick peas, olive oil, tahini, lime juice, and garlic in a food processor until smooth.
Note: we could not find plain tahini; therefore, substituted with a tahini dipping sauce which was packed with herbs and awesome flavor!
Season with salt and pepper to taste, add cumin and avocados and pulse mixture until a creamy texture.
Serve topped with more olive oil if desired and garnish with cilantro and red pepper flakes to taste.
Serve with kale chips and favorite cracker or veggie.
