When in June we eat light around here or at least try to include our veggies in a side dish when we cook out on the grill, and spend time with the family outside. The hubby manned the grill this Sunday while I watched Delilah and Tucker, our 2 year old labrador, splash in the pool and sprinkler. This week the temps crept up into the 90’s and we were looking for something to serve along side our grilled chicken that would balance our tangy marinade without overpowering flavor. Also, looking for a side dish that was healthy and light leaving us feeling satisfied without the guilt!
We pulled up our nifty pinterest account and found a summer salad that fit the bill and was super easy to prepare, 10 minutes of prep time- we kid you not! We are a cucumber loving family over here and became intrigued when we came across a colorful salad loaded with cucumber, radish, and scallions topped with a sour cream dressing- yum! A European dish loaded with folic acid, potassium, and Vitamin C was the epitome of summer deliciousness in a bowl, and tasted perfect with our tangy grilled chicken. Crunchy and satisfying with a hint of sweetness, this salad is a must try this summer season!
Ingredients
1 english cucumber, sliced thin
2 bunches radishes, sliced thin
1 bunch scallions, fine chop
3/4 cup sour cream
3/4 tsp to 1 tsp salt, or to taste
pepper to taste
sliced almonds and basil leaves or dill for garnish
Preparation
in a medium bowl, combine scallions, cucumbers and radish slices
in a small bowl, mix together the sour cream, salt and pepper
pour sour cream mixture over top of radish and cucumber salad, stir together
garnish with sliced almonds, dill or basil leaves
