We are here to share a little inspiration for your weekly grind with a summer zucchini dish that is easy peasy to make for the family and will knock your socks off with its light, fluffy, sweet, and savory taste! There is something about zucchini that screams summer time- whether you are making it on the grill or seasoning it with a little salt and pepper, and throwing it into the over- zucchini tastes amazing and is super healthy for you and your little ones too!
Well…..wait for it, have you ever tried zucchini in a pie? Think sweet, flaky, veggie filled yumminess that pairs perfectly with a light summer salad, cut up watermelon, coleslaw, poultry- you name it, the pie pairs! Seriously, it is as good as it sounds and you are going to want to take this sweet little zucchini pie to your next cookout or family gathering- trust us, they will thank you! 1/2 cup canola oil
1 cup baking mix, we used Maple Grove Farms Gluten Free App Purpose Baking Mix
1/2 cup parmesan cheese
1/2 cup shredded cheese
1 small sweet onion, diced
3 cups zucchini, sliced very thin
preheat oven to 350 degrees
spray a 9-inch pie dish with cooking spray
slice zucchini into thin discs, finely dice sweet onion
combine all ingredients into large bowl and pour into prepared pie dish
bake for 40-45 minutes, or until cooked through and golden brown
