Delilah almost had her wish come true today. The snow was coming down pretty heavy for about 15 minutes but as Delilah was throwing on her snow boots the sun came out and decided that this Monday was not going to be a snow day after all. The babe was pretty disappointed but Monday was quickly redeemed with a few games of Guess Who and festive Valentines Day Hershey Kisses. Instead of sledding we kept the fun in doors and made banana nut muffins for daddy and watched Disney Movies.
Sawyer had fun with his toys and kept busy in his entertainer while he watched mama get a head start on dinner. We are always game for a warm and savory meal that is super healthy and equally delicious. Casseroles in general are a love of ours as it feeds the whole family and then some, making it perfect for left overs the next day or as a quick and yummy lunch.
This casserole tastes amazing and is super easy to whip up. Lots of cheese, tomatoes and chicken warmed to perfection with just the right amount of tang from the balsamic vinegar. The quinoa keeps you feeling satisfied and gives the meal a hearty flavor. The hubby and Delilah enjoyed their casserole with a side of thick crusty bread. They give it two thumbs up as does mama! #mondaywinning
Ingredients
3 cups rotisserie chicken, diced
1 cup quinoa, uncooked
2 cups chicken broth
2 cups petite diced tomatoes
2 tbsp tomato paste
1 tbsp balsamic vinegar
¼ cup half and half
½ tsp crushed red pepper (optional)
salt and pepper, to taste
¼ cup grated parmesan cheese
1 cup shredded mozzarella cheese, divided
1 cup grape tomatoes, halved
handful fresh basil, chopped
Preparation
preheat oven to 375 degrees
bring 2 cups of chicken broth to a boil
add uncooked quinoa to boiling chicken broth, reduce heat to a simmer
allow quinoa to simmer for 12-15 minutes, remove from heat
let quinoa cool for 5 minutes, fluff with fork, set aside
in a medium sauce pan combine diced tomatoes, tomato paste and balsamic vinegar
bring tomato mixture to a simmer on medium heat
add half and half, crushed red pepper and salt and pepper
in a large bowl mix together chicken and cooked quinoa
add parmesan cheese and 1/2 cup of mozzarella cheese to chicken mixture
add tomato sauce to chicken and quinoa mixture, combine well
pour quinoa mixture into a prepared 9×13 baking dish
top with the remaining mozzarella cheese and tomatoes
bake in the oven for 12 to 15 minutes, or until cheese is melted and casserole is heated through.
top casserole with fresh basil
